As long as each Arduino has a different COM port in Device Manager, you can hook up as many as you want. Last year, I wrote custome firmware and LabVIEW functions to automatically detect all Arduino's connected and and I gave each it's own identity (just in case they didn't end up on the same COM port).
I'm not sure how all this network stuff will work out with the device you linke to but as a long as the device shows up as a serial device in Device Manager with a working COM port, LabVIEW should work as it won't be able to tell the difference.
