Selection of DAQ

We would like to acquire the Piezo electric material properties such as voltage, current, resistivity and temperature due to the vibration or temperature variation. So could you please suggest me which kind of  DAQ system is best for acquire the above parameters. 

Note:  Based on the Piezo electric material properties generating voltage variation will be there like mV or V

How many channels? How fast? Will the same system be controlling a shaker table or temperature chamber? What exactly is the system as a whole doing? What sort of environment will it be working in?

These are also questions that your NI rep will have.
