Just started using LabView. I have one question. When using the write to measurement file VI and saving to a series of files, can you save them to one excel file but multiple worksheets so that multiple trials of the same data are in one place?

You can create a text file with "Write to Measurement File", but you cannot create an Excel file. Excel is a custom Microsoft format. You can use the Report Generation VIs to create and write to Excel files if you have the Report Generation Toolkit.
Otherwise you'll need to write your own Excel interface using ActiveX.
So to answer your question, no. You can't use "Write to Measurement File" to write to different Excel sheets within a workbook, since "Write to Measurement File" doesn't support the .xls or .xlsx file types.
