Setting up a task in MAX or using the DAQ assistant, you can set up an acceleration task fairly easily. Also there are a few examples (more if you have the Sound and Vibration Toolkit) under the NI Example Finder under Hardware Input and Output » DAQmx » Analog Measurement » Acceleration that you could adapt.
To get your measurements into RMS, try using one of the RMS VIs available in LabVIEW. For example try Programming » Waveform » Analog Waveforms » Waveform Measurement » Cycle Average and RMS.vi
